Louisiana crawfish run January through July, peaking in March, April, and May. We follow the season because we respect it. We don't serve frozen crawfish or import year-round products to fake availability. When crawfish are in season, we're boiling. When they're not, we're honest about it. Here's what the season actually looks like. Early January brings smaller crawfish that are eager and bright. As the weeks progress into February and March, size builds and sweetness peaks. April and May are the prime months, big, meaty, full of flavor. June and July bring the biggest crawfish of the year but the season winds down fast. By August, they're gone until next winter. I can not stress this enough - book early.
